Sautéeing beet greens in olive oil turns them meltingly tender, making them a delicious topping for crostini.

Ingredients

  • 3 T olive oil
  • 1/2 t crushed red pepper flakes
  • 2 clv garlic
  • 12 oz beet greens
  • 1/4 t salt
  • black pepper
  • 1 baguette

Spicy Beet Crostini Directions

  1. Heat a large, heavy skillet over high heat. Add the olive oil, crushed red pepper flakes, and garlic. Sauté for 1 minute, then add the beet greens and sauté, tossing occasionally, until dark green and all juices have evaporated. Add salt and black pepper to taste. Remove from heat.
  2. Preheat broiler and toast the baguette slices on each side until golden and crispy. Top each slice of toast with a spoonful of beet greens and a drizzle of olive oil. Serve warm.
