- 3 T olive oil
- 1/2 t crushed red pepper flakes
- 2 clv garlic
- 12 oz beet greens
- 1/4 t salt
- black pepper
- 1 baguette
Spicy Beet Crostini Directions
- Heat a large, heavy skillet over high heat. Add the olive oil, crushed red pepper flakes, and garlic. Sauté for 1 minute, then add the beet greens and sauté, tossing occasionally, until dark green and all juices have evaporated. Add salt and black pepper to taste. Remove from heat.
- Preheat broiler and toast the baguette slices on each side until golden and crispy. Top each slice of toast with a spoonful of beet greens and a drizzle of olive oil. Serve warm.
