- 1 onion, chopped
- 2 clv garlic, minced
- 2 T olive oil
- 2 carrot, shredded
- 1/2 green bell pepper, diced
- 2 bay leaves
- 1/4 c fresh parsley, chopped
- 2 T fresh basil, chopped or 2 teaspoons dried basil
- 1 T fresh oregano, chopped or 1 teaspoon dried
- 1 T fresh thyme leaves, chopped or 1 teaspoon dried
- 6 c plum tomatoes, peeled and chopped
- 6 oz tomato paste
- 1 T honey, optional
- salt and freshly ground black pepper to taste
Basic Tomato Sauce Directions
- Saute onion and garlic in olive oil until soft. Add carrots, pepper, and herbs; stir well. Add tomatoes, tomato paste, honey, salt and pepper. Simmer 15 minutes. Remove bay leaf and serve or freeze. To can, ladle into hot, sterilized pint jars to within 1/2-inch of the top, add 1 tablespoon lemon juice or vinegar per pint to assure acidity, seal with sterilized lids according to manufacturer's instructions and process full jars in a boiling water bath for 35 minutes. Makes three pints.
