Sunshine Smoothie with Coconut, Clementine, and Turmeric

This smoothie makes a great breakfast - it's full of fiber, protein, potassium and a healthy dose of vitamin C. The ginger and turmeric add anti-inflammatory benefits to boot.

  • 1/4 c rolled oats
  • 1 c coconut water
  • 2 T coconut milk
  • 2 clementines
  • 1 1/2 T peeled, roughly chopped fresh turmeric
  • 1 1/2 T peeled, roughly chopped ginger
  • 1/4 t vanilla extract
  • 1 t honey
  • 1 t maca powder

  1. Blend the oatmeal into a fine powder in the blender. Add the coconut water, coconut milk, clementines, turmeric, ginger, vanilla, and honey and maca if using. Blend until smooth and creamy.
