- 1 lb ground buffalo
- 1 lb ground pork sausage
- 6 T fresh cilantro, chopped, divided use
- 1/2 c yellow onion, finely chopped
- 4 T canned green chilies, finely chopped, divided use
- 1 small jalapeno, minced
- 2 t taco seasoning, divided use
- 1/2 t ground chipotle pepper
- 1/2 lime, zest and juice
- 8 oz cream cheese, softened
Texican Buffalo Burgers Directions
- In a large bowl combine ground meats, 4-tablespoons cilantro, onion, 2-tablespoons canned chilies, jalapeno, 1-teaspoon taco seasoning, chipotle pepper, lime zest and juice. Mix well and set aside. In a smaller bowl combine cream cheese, 2-tablespoons cilantro, 1-teaspoon taco seasoning and 2-tablespoons canned chilies. Mix well and set aside. Divide the burger mix into 8 or 12 equal portions and form into patties. Place approximately 2-tablespoons of the cream cheese mixture in the center of a patty and top with another patty to make the stuffed burgers. Seal the edges well. Grill over medium heat/low flame to desired doneness. Alternatively, burgers may be broiled. Remove the burgers from the grill and let rest a few minutes before serving on your favorite toasted buns or sourdough bread.
