Beet Hummus

This hummus is a vibrant bright pink thanks to the addition of steamed beets.

  • 1 beet
  • 1 1/2 c cooked chickpeas
  • 1 clv garlic
  • 3 T tahini
  • 3 T lemon juice
  • 1/4 c water
  • 1 1/2 t cumin
  • 1/2 t salt

Beet Hummus Directions

  1. Place the beet in a steamer basket above simmering water and steam, covered, until tender, up to 15 minutes depending on the size of the beet pieces.
  2. Place the garlic and chickpeas in the bowl of a food processor and pulse to combine. Add the tahini, lemon juice, 1/4 cup of water, cumin, salt, and cooked beets, and process until smooth and creamy, adding more water, a couple tablespoons at a time, to reach the desired consistency.
