Carrot Pesto Sammies

If you're like me, carrot sticks get borring pretty fast. Adding hummus and other dips only go so far. I love putting a twist to classic recipes by substituting in other ingredients. Give your tastebuds a new adventure! You won't be disapointed!

  • 1/2 c sunflower seeds
  • 3 carrots
  • 1/2 clv garlic
  • 1/2 c shredded Parmesan cheese
  • 2 T sunflower oil
  • pn salt
  • pn pepper
  • 2 sli sourdough bread
  • 1/4 c pea shoots
  • 1 tomato

Carrot Pesto Sammies Directions

  1. In a small frying pan lightly toast sunflower or pumpkin seeds on medium heat for about 5 minutes. Add a small amount of oil, salt, and pepper for flavor. Remove from heat and set aside.
  2. Using a food processor, combine carrots, garlic, Parmesan cheese, oil, toasted seeds, salt, and pepper. Process until mixture reaches a spreadable consistency. Add additional oil as needed and more salt and pepper to taste.
  3. Spread pesto on two slices of bread. Add pea or sunflower shoots to one slice of bread and top with sliced tomato. Put the slices of bread together, and enjoy!
