Studded with chia seeds, the wonderful superfood, these pancakes are really easy to whip up.

Ingredients

  • 1 1/2 c all-purpose flour
  • 1 T baking powder
  • 1 t salt
  • 3 T chia seeds
  • 1 t cinnamon
  • 3 T maple syrup
  • 1 t vanilla extract
  • 1 1/2 c almond milk
  • 1 t apple cider vinegar

Chia Seed Pancakes Directions

  1. In a large bowl, whisk together the flour, baking powder, salt, chia seeds, and cinnamon. In a small bowl, whisk together the maple syrup, vanilla extract, almond milk, and apple cider vinegar. Let rest 10 minutes.
  2. Heat a lightly oiled skillet over medium heat. Spoon batter onto skillet in 1/4 cup scoops. Cook, and gently flip the pancakes when bubbles appear in the middle of each one. Cook for an additional 3-5 minutes on the other side.
  3. Enjoy hot, with your favorite pancake toppings!
