- 1 T olive oil
- 1 c basmati rice
- 1 1/2 c vegetable broth
- 3 clv garlic
- 1 lime
- 1/2 c cilantro
- 1 t salt
Cilantro-Lime Rice Directions
- Heat oil in a saucepan over medium heat. Add the garlic and rice. Increase the heat to medium-low and saute for 3-4 minutes, stirring frequently. Add the broth, salt, and lime juice, and bring to a boil. As soon as the liquid boils, cover and reduce heat to low. Simmer for 15-20 minutes, or until the rice is tender. Once the rice is done, fluff with a fork. Stir in the lime zest and cilantro. Serve immediately.
