Cilantro-Lime Rice

This rice, with its fragrant hint of lime and cilantro, makes a fine side dish.

  • 1 T olive oil
  • 1 c basmati rice
  • 1 1/2 c vegetable broth
  • 3 clv garlic
  • 1 lime
  • 1/2 c cilantro
  • 1 t salt

Cilantro-Lime Rice Directions

  1. Heat oil in a saucepan over medium heat. Add the garlic and rice. Increase the heat to medium-low and saute for 3-4 minutes, stirring frequently. Add the broth, salt, and lime juice, and bring to a boil. As soon as the liquid boils, cover and reduce heat to low. Simmer for 15-20 minutes, or until the rice is tender. Once the rice is done, fluff with a fork. Stir in the lime zest and cilantro. Serve immediately.
