Classic Tuna Melt
This old standby has been updated a bit, but is still delicious.

  • 12 oz canned chunk light tuna, drained
  • 2 green onions, minced
  • 2 T celery, minced
  • 2 T mayonnaise, or more to taste
  • 1 T lemon juice
  • 1 T minced parsley
  • 1/8 t salt
  • ds hot sauce
  • freshly ground pepper to taste
  • 1/2 lb tomatoes, sliced
  • 3/4 c shredded cheddar cheese
  • 4 whole wheat english muffins, split and toasted

Classic Tuna Melt Directions

    Preheat broiler. Combine tuna, green onions, celery, mayonnaise, lemon juice, parsley, salt, hot sauce and pepper in a medium bowl. Divide the tuna mixture evenly between each muffin half; top with tomato slices and cheese. Place muffins on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes.
