  • 2 t light brown sugar
  • 1 1/2 T coconut oil
  • 1 3/4 lb sweet potatoes
  • 3/4 t salt
  • 1/4 t black pepper
  • 1/4 t nutmeg

Coconut Oil Roasted Sweet Potatoes Directions

  1. Preheat the oven to 350˚F. 
  2. Place the sweet potatoes in a large mixing bowl. Add the melted coconut oil, brown sugar, salt, pepper, and nutmeg, and stir to coat. Transfer the sweet potatoes onto a baking sheet in an even layer. 
  3. Roast, tossing occasionally, until tender and caramelized, about 1 hour. Serve hot.
