Coconut-Lime Pork Tacos with Black Beans and Avocado

Piled high with spiced ground pork, black beans, and diced avocado, these tacos are not only super-flavorful, but can be on your table on 20 minutes. Needless to say, a margarita would go very nicely!

  • 1 T olive oil
  • 1 lb ground pork
  • 1 onion
  • 1 clv garlic
  • salt
  • pepper
  • 1 1/2 t cumin
  • 1 1/2 t chili powder
  • 1 t oregano
  • 1 t smoked paprika
  • pn cayenne
  • 2/3 c coconut milk
  • 3 T pineapple juice
  • 1 T lime juice
  • 2 c black beans
  • corn tortillas
  • 2 avocado

Coconut-Lime Pork Tacos with Black Beans and Avocado Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sprinkle with salt and pepper. Cook 3-5 minutes, stirring occasionally, until softened. Move the onion and garlic off to the side of the pan, and add the cumin, paprika, oregano, and cayenne. Toast the spices in the skillet for 1 minute, until fragrant, then incorporate with the onion and garlic until well-coated.
  2. Add the ground pork and increase the heat to medium-high. Cook, stirring occasionally, breaking up any large chunks, just until the pork is cooked through. Strain any excess fat out of the skillet. Pour the coconut milk into the pan, and stir to combine. Simmer 5 minutes, stirring occasionally, then fold in the black beans. Add the pineapple juice and lime juice, and cook until the beans are heated through, 2-3 minutes. Taste and adjust seasonings if needed.
  3. Enjoy immediately, or cover and allow to simmer over low heat until ready to serve. Serve spooned onto warmed tortillas, topped with avocado and any other toppings you’d like (see note).
