- 6 1/2 lb sweet potatoes
- 2/3 c olive oil
- 2 T paprika
- 2 T coriander
- 2 T garlic
- 2 T sea salt
- 1/2 t crushed chili flakes
- 1/2 t cayenne pepper
Creole Roasted Sweet Potatoes Directions
- Preheat oven to 350˚.
In a large bowl, mix together olive oil, paprika, coriander, garlic, salt, chili flakes, and cayenne pepper. Add the sweet potatoes and toss to coat with the oil and spices.
Spread the sweet potatoes in a single layer on a sheet pan. You may need more than one pan.
Cook for 35-40 minutes, or until lightly browned and tender, stirring after 20 minutes.
Serve hot or at room temperature.
