Curried Chickpeas

This spicy side dish can be served hot or cool.

  • 4 c cooked chickpeas, well drained
  • 1 c canola oil
  • 1 t crushed red peppers, or to taste
  • 4 clv garlic, minced
  • 1 T cumin
  • 1 t turmeric
  • 1 t coriander
  • 1 t cardamom
  • 1/2 t cayenne pepper, or to taste
  • 4 scallions, thinly sliced
  • 1/2 lb spinach, rinsed and chopped
  • 2 tomatoes, diced
  • 1 T lime juice
  • 1/2 t black pepper
  • 1/2 t salt

Curried Chickpeas Directions

    Sauté garlic and red pepper in oil; add spices and continue to sauté until golden brown. Add tomatoes, spinach, and scallions to chickpeas. Add sautéed items to chickpeas and mix well. Add limejuice, salt, and black pepper and mix.
