Dirty Cajun Rice

  • 1 c long grain brown rice
  • 2 c water
  • 3 T cider vinaigrette (for use in our Dirty Cajun Rice)
  • 1 T safflower oil
  • 1 c yellow onion, diced
  • 1/2 c celery, diced
  • 1/2 c green bell pepper, diced
  • 2 clv garlic (minced)
  • 2 T jalapeno, minced
  • 2 scallions, chopped
  • 2 T blanched slivered almonds, toasted
  • 2 T pecan halves, toasted
  • 1 t ground cumin
  • 1 t dried oregano
  • 1 pn cayenne pepper
  • salt and pepper to taste

Dirty Cajun Rice Directions

  1. Combine rice and water in a medium saucepan. Bring to a boil over high heat, cover, reduce heat to low, and simmer covered until rice is tender, about 50 minutes. Test the rice, if it’s not yet tender, cover and allow to cook 5-10 minutes longer.
  2. While rice cooks, prepare the cider vinaigrette, recipe follows.
  3. When rice is almost done, heat the oil in a skillet and sauté onion, celery and peppers in oil until tender, about 6-8 minutes. Stir in spices and garlic and stir for about 30 seconds longer. Stir into cooked rice along with 3 tablespoons vinaigrette and toasted nuts. Season to taste with salt and pepper and serve hot.
