Duck Fat Potatoes

  • 3/4 lb Yukon Gold potatoes
  • coarse salt
  • 2 T duck fat
  • 2 rosemary sprigs
  • 3 clv garlic
  • black pepper

Duck Fat Potatoes Directions

  1. Preheat oven to 425F.
  2. Place the potatoes in a saucepan and cover with water. Add a pinch of salt and bring to a boil. Lower heat to medium and cook potatoes 10-15 minutes, until you can pierce them easily with a fork. Drain, and let rest until cool enough to handle. Place the potatoes on a rimmed baking sheet and use the palm of your hand to smash each potato so that it lays flat. Drizzle with duck fat and arrange the rosemary and garlic on top. Season generously with salt and pepper, then toss gently to coat everything in duck fat.
  3. Roast for 20 minutes. Flip them, then roast and additional 8 minutes. Serve immediately.
