Gingered Beets

A warming, gingered dish using a combination of sweet and savory way done the way only Willy Street Co-op can do it!

  • 2 t lemon juice
  • 2 T tamari
  • 2 T maple syrup
  • 1/2 c ginger
  • 5 lb beets

Gingered Beets Directions

  1. Steam beets until tender. While still warm, remove the skins from the beets and slice into half-moons. Set aside.
  2. In a large bowl, combine the grated ginger, maple syrup, tamari, and lemon juice. Add the beets and toss well.
  3. Cover and place in refrigerator to cool, about 30 minutes. Serve.
