- 2 t lemon juice
- 2 T tamari
- 2 T maple syrup
- 1/2 c ginger
- 5 lb beets
Gingered Beets Directions
- Steam beets until tender. While still warm, remove the skins from the beets and slice into half-moons. Set aside.
- In a large bowl, combine the grated ginger, maple syrup, tamari, and lemon juice. Add the beets and toss well.
- Cover and place in refrigerator to cool, about 30 minutes. Serve.
