Maple Garlic Pork Chops with Squash, Apples, and Onions

This meal is cooked all in one pan, making for quick clean up! The flavors of the pork pair well with the sweetness of the maple sugar and butternut squash.  This would go well with local kale sautéed with garlic.

  • 2 pork chops
  • 3 clv garlic
  • 2 t maple sugar
  • salt
  • pepper
  • 1 butternut squash
  • 1 onion
  • 1 apple
  • 2 T butter
  • 1/2 c apple cider

Maple Garlic Pork Chops with Squash, Apples, and Onions Directions

  1. Rub pork chops with 2 cloves of the chopped garlic and maple sugar. Season with salt and pepper. Set aside.
  2. Heat a large cast iron skillet on the stove top and melt 1 T butter in pan. Add pork chops, and cook until the internal temperature reaches 130°F. Transfer to a plate, cover, and set aside to rest.
  3. Add squash, onion, and apple cider or water to the pan, and scrape up any pork chop bits. After about 5 minutes add the apple. Sauté over medium heat until a fork inserted into the squash is tender, 10-15 minutes. Add the remaining clove of chopped garlic, salt, pepper, a few sprinkles of maple sugar, and last tabelspoon of butter. Stir. Nestle pork chops back into the pan with the squash and onions. Cook a few more minutes and serve.
