Peel papaya and halve; scoop out seeds, quarter. Drop into a pot of generously salted water, boil 10 minutes. Drain, then drop into a bowl of ice water to cool. Drain and puree in food processor. Scoop into heavy saucepan. Add cream, salt to taste, and pepper. Simmer, stirring, until the mixture is smoothly thick, like a rich applesauce; approximately 10 minutes. As with applesauce, you'll need to be aware of volcanic splatters; stir with pot top held shield-like between you and the active puree. Serve hot or warm.
