Simple Spaghetti Sauce

    • 2 T
    • olive oil
    • 1
    • onion (small, finely chopped)
    • 2 clv
    • garlic (minced)
    • 1⁄2 lb
    • ground beef ( or meat substitute, optional)
    • 1 cn
    • whole tomatoes (28-oz)
    • 1 T
    • basil (dried)
    • 1 t
    • oregano
    • salt and pepper (to taste)

This easy sauce will get dinner on the table in a hurry. Customize the seasonings to your palate.


Warm oil in heavy saucepan; add onion and garlic and cook gently until onion is translucent. Crumble in the ground beef or meat substitute if using and cook until the beef is browned. Drain off any grease. Add the tomatoes, crushing them with clean hands or a wooden spoon and bring to a boil. Crush the herbs and add them to the sauce, along with salt and pepper to taste. Reduce the heat and simmer 20-30 minutes.
