Boil or grill the corn. When it’s cooked, remove the kernels and set aside to cool.
Place the sliced peach, cherries, and shallot in a large bowl. Toss with the olive oil and lime juice, then add the arugula and toss to combine. Season with salt and pepper. Fold in the corn kernels, and serve topped with the goat cheese.
