Wild Yam Soba and Veggie Stir-Fry

  • 8 3/4 oz eden wild yam soba noodles
  • 2 T eden toasted sesame oil
  • 1/2 t eden hot pepper sesame oil
  • 3 clv garlic
  • 1/2 lb button mushrooms

Wild Yam Soba and Veggie Stir-Fry Directions

  1. Cook soba noodles per package directions, rinse, drain, and set aside.
  2. Heat the oil in a large skillet and saute the garlic for one minute. Add the mushrooms and half the soy sauce. Saute for 3-4 minutes. Add the carrots, tofu, and soba noodles. Sprinkle on the remaining soy sauce, cover, and reduce the heat to medium-low. Cook for 5 minutes. Remove the cover and stir the noodles and vegetable to combine. Add more soy sauce, if desired. Turn the heat to medium. Add the snow peas and scallions; saute 1-2 minutes until the snow peas are crisp-tender.
