Zucchini Noodles with Tomatoes and Corn

  • 4 zucchini
  • 2 ears sweet corn
  • 1 pt cherry tomatoes
  • 1/4 c champagne vinegar
  • 1/4 c olive oil
  • 1/4 c sunflower oil
  • 1 clv garlic
  • 1/2 t salt
  • 1/4 t sugar
  • 1/2 c basil leaves
  • 1/2 c shaved Parmesan

Zucchini Noodles with Tomatoes and Corn Directions

  1. Toss together the zucchini, corn, and tomatoes in a large serving bowl.
  2. Combine the vinegar, olive oil, sunflower oil, garlic, salt, and sugar in a jar. Cover with a lid, then shake well to combine. 
  3. Pour the vinaigrette over the noodles and toss to coat evenly. Allow to stand about 10 minutes, to let the noodles soften enough that you can twirl one on a fork. Right before serving, sprinkle with basil and Parmesan, if using.
