Borlotti Beans with Garlic and Olive Oil Directions
Place the beans, tomatoes, garlic, sage, and olive oil in a medium pot. Add cold water to cover by 1 inch. Bring to a boil over medium-high heat, then reduce to medium-low. Partially cover and simmer. Add water 3/4 cup at a time to keep the beans fully submerged, and simmer for up to 1 1/2 hours, until the beans are tender. Season with salt and pepper, and drizzle with more olive oil, if desired.
