  • 1 onion
  • 4 clv garlic
  • 1 green pepper
  • 6 scallions
  • 2 celery rib
  • 4 T butter
  • 1/2 c catsup
  • 2 T hot sauce
  • 1 t salt
  • 1/2 t black pepper
  • 4 bay leaves
  • 1/2 t cayenne pepper
  • 2 t ground cumin
  • 1/2 t nutmeg
  • 1 lb ground turkey
  • 1 lb ground beef
  • 2 eggs
  • 2 c breadcrumbs

Cajun Meat Loaf Directions

  1. In a large skillet over medium heat, sauté onion, garlic, green pepper, scallions, and celery in the butter until the veggies begin to stick. Add catsup, hot sauce, salt, pepper, bay leaves, cayenne, cumin, and nutmeg and cook for about 2 minutes. Remove bay leaves. In a large bowl, combine turkey (or pork), beef, eggs, and breadcrumbs. Add sautéed vegetables and mix well. Shape into loaf and place on rimmed baking sheet, or pack into a large loaf pan. Bake uncovered at 350º for 45-60 minutes.
