Hickory Plank-Grilled Flat Iron Steak

Grilling on a hickory plank gives beef a pronounced smokey flavor, and gives you perfectly tender results every time.

  • 2 t kosher salt
  • 2 t brown sugar
  • 2 t chili powder
  • 1/2 t black pepper
  • 1/2 t cayenne
  • 1/2 t garlic powder
  • 1/2 t cumin
  • 2 lb flat iron steak

Hickory Plank-Grilled Flat Iron Steak Directions

  1. In a small bowl, combine the salt, brown sugar, chili powder, black pepper, cayenne, garlic powder, and cumin. Rub the seasoning mixture all over the steak, and refrigerate for 2-4 hours.
  2. Submerge a 6" x 12" hickory plank in water for one hour.
  3. Prepare a charcoal grill for high heat, or heat a gas grill to 400°F. Have a spray bottle of water handy.
  4. Place the steak on the soaked hickory plank. Set on the grill, and grill with the lid closed for 8-10 minutes for medium-rare. Spray the edges of the plank with water if they catch fire. Remove from grill and allow to rest for 5 minutes, then slice against the grain, and serve.
