- 2 T sunflower oil
- 1 lb ground chicken
- salt
- pepper
- 1/2 c cooked wheat berries
- 2 T fish sauce
- 1 T lime juice
- 1/3 c chopped basil
- lettuce cups
Thai Chicken and Wheat Berry Salad Directions
- Heat the oil over medium-high heat in a large skillet. Add the chicken and sprinkle with salt and pepper, and cook, stirring, 3-4 minutes, until cooked through. Add the wheat berries, fish sauce, and lime juice. Remove skillet from heat and stir in the basil. Serve warm, garnished with more basil leaves, with lettuce cups.
