Chipotle Beans and Rice

A very versatile and tasty dish. Does well all by itself, as an accompaniment to meat and cheese dishes, and as a fantastic burrito filler. Always a hit a parties!

  • 4 c black beans
  • 2 c rice
  • 1 large red bell pepper
  • 1 large yellow onion
  • 2 chipotle peppers
  • 1 c olive oil
  • 2 T garlic
  • 2 T cumin
  • 2 T chili powder
  • salt

Chipotle Beans and Rice Directions

  1. Heat a cast iron pan. Add oil, and saute peppers and onion until soft. Add garlic, cumin, chili powder, and salt. Be careful not to burn the garlic. Combine this mixture with the beans and rice. Mix well and adjust salt to taste.
