quinoa-pilaf
- 4 c water
- 1/4 c tamari
- 3/4 t turmeric
- 2 c quinoa
- 1/4 c olive oil
- 1 small onion, finely diced
- 2 carrot, diced small
- 2 clv garlic, crushed
- 1/3 c raisins
- 1 c slivered almonds, toasted
- 1 c frozen peas
- 1 green pepper, diced
- tamari to taste
Quinoa Pilaf Directions
- Boil water, tamari, and turmeric. Add quinoa, reduce heat to simmer and cook 20 minutes or until liquid is absorbed. Cool mixture. Sauté onions, garlic, carrots, and raisins in olive oil. Cool. When cooled, mix sautéed vegetables and quinoa with almonds, peas, and peppers. Add additional tamari to taste if desired.
