Wash your apples to remove wax. Peel, slice, and core the apples. Notice how nice and dense the Arkansas Blacks are. Heat oil over medium heat and add onion to the hot pan. Stir. Add sliced apples and curry powder and cook for 2-4 minutes or until apple is warmed through. Add water and cover and cook for another 2-4 minutes. Serve atop risotto and kale.
