Apple, Shallot, and Herb Dressing

This dressing is rich with herbs and loads of vegetables, and bakes up with a perfectly crispy crust.

  • 1 lb crusty white bread
  • 4 T butter
  • 10 shallots
  • 1 fennel bulb
  • 1 celery root
  • 1 1/2 c walnuts
  • 2 apples
  • salt
  • pepper
  • 1/2 t coriander
  • 2 t chopped thyme
  • 2 t chopped sage
  • 1 c golden raisins
  • 3 c milk

Apple, Shallot, and Herb Dressing Directions

  1. Arrange the bread in a single layer on a baking sheet and let dry overnight.
  2. Preheat oven to 350˚F. Butter a 13x19-inch baking dish.
  3. Melt the butter in a sauté pan over medium heat. Add the shallots and sauté, stirring occasionally, until soft and golden, 10-12 minutes. Add the fennel, celery root, walnuts, and apples, and continue to sauté, stirring occasionally, for 4-5 minutes, until fennel is tender. Season to taste with salt and pepper.
  4. In a large bowl, fold together the bread and the shallot mixture. Add the coriander, thyme, sage, raisins, and 3 cups of the milk. Gently fold to combine, then let stand, stirring occasionally, until the milk is absorbed, about 30 minute. If it seems dry, add more milk as needed. Taste and adjust the seasoning as needed with more salt and pepper.
  5. Transfer to the prepared baking dish, and bake 50 minutes-1 hour, until browned and crispy.
