- 4 zucchini
- 2 ears sweet corn
- 1 pt cherry tomatoes
- 1/4 c champagne vinegar
- 1/4 c olive oil
- 1/4 c sunflower oil
- 1 clv garlic
- 1/2 t salt
- 1/4 t sugar
- 1/2 c basil leaves
- 1/2 c shaved Parmesan
Zucchini Noodles with Tomatoes and Corn Directions
- Toss together the zucchini, corn, and tomatoes in a large serving bowl.
- Combine the vinegar, olive oil, sunflower oil, garlic, salt, and sugar in a jar. Cover with a lid, then shake well to combine.
- Pour the vinaigrette over the noodles and toss to coat evenly. Allow to stand about 10 minutes, to let the noodles soften enough that you can twirl one on a fork. Right before serving, sprinkle with basil and Parmesan, if using.
