Green Curry with Vegetables

  • 14 oz coconut milk
  • 1 T green curry paste
  • 1 c vegetable broth
  • 1 t salt
  • 2 T brown sugar
  • 1 T ginger
  • 1 T garlic
  • 1/4 c basil leaves
  • 1 c zucchini
  • 2 c broccoli florets
  • 1 carrot
  • 1 onion
  • 8 oz firm tofu
  • 2 c rice

Green Curry with Vegetables Directions

  1. Combine the coconut milk, curry paste, vegetable broth, salt, brown sugar, ginger, garlic and basil in a 2 quart saucepan and bring to a boil over medium heat. Reduce heat to low and simmer 15 minutes. Add the vegetables and tofu and simmer 5-10 minutes longer, or until vegetables reach desired tenderness. Serve over hot rice.
