Watermelon and Prosciutto with Mint and Toasted Almonds Directions
Toast the almonds in a small dry skillet over medium heat, stirring frequently, until golden, about 5 minutes. In a small bowl, stir together the almonds, mint, orange zest, orange juice and oil. Season with salt.
Place the cubed watermelon in a large serving bowl and toss with the vinegar. Season with salt and arrange the prosciutto on top. Drizzle with the almond-orange dressing and serve.
