Buffalo Wings

These wings are based on the original recipe from Anchor Bar in Bufflao, New York, and are great with blue cheese dip.

  • canola oil
  • 2 lb chicken wings
  • 8 T butter
  • 12 oz Frank's Red Hot Original Cayenne Pepper Sauce
  • carrot sticks
  • celery sticks

Buffalo Wings Directions

  1. Preheat oven to 200˚F. Place a wire rack in a rimmed baking sheet.
  2. Pour 2 inches of oil into a 6-quart Dutch oven. Heat over medium-high until a deep-fry thermometer reads 400˚F. In two batches, add chicken wings to the oil and cook, stirring occasionally, for 10-12 minutes, until golden-brown and crisp. Use a slotted spoon to transfer the wings to the prepared rack, and transfer to the oven.
  3. Combine the butter and hot sauce in a medium (heat-proof) bowl, and set over a pot of boiling water. Heat, whisking, until the butter is melted and the sauce is hot.
  4. Transfer the chicken wings to the bowl of sauce and toss to combine. Serve with carrots and celery, and blue cheese dip.
