Heat oil in a saucepan over medium heat. Add the garlic and rice. Increase the heat to medium-low and saute for 3-4 minutes, stirring frequently.
Add the broth, salt, and lime juice, and bring to a boil. As soon as the liquid boils, cover and reduce heat to low. Simmer for 15-20 minutes, or until the rice is tender.
Once the rice is done, fluff with a fork. Stir in the lime zest and cilantro. Serve immediately.
