Grilled Apricots with Almond Whipped Cream and Honey Directions
Heat a grill to medium, or heat a grill pan over medium-high heat.
In a small bowl, stir together the melted butter and 1 teaspoon of the honey. Brush the honey butter on the cut sides of the apricots. Place the apricots, cut-side-down, on the grill or grill pan. Grill for 2 minutes, until dark grill marks appear. Transfer, cut-side-up, to a serving dish.
Use a stand mixer with the whisk attachment or a hand mixer to beat the whipping cream until stiff peaks form. Fold in the almond extract and powdered sugar. Spoon a dollop of whipped cream onto each apricot half. Top with sliced almonds and drizzle with remaining honey. Enjoy!
