Margot’s Split Pea Soup
An old housemate passed along her mom’s split pea soup recipe, adapted for our Co-op’s vegetarian needs. It is one of the best I’ve ever had. Enjoy Margot’s variation on split pea soup! - SR

  • 1 T oil
  • 2 c onion
  • 1 c carrot
  • 2 c celery
  • 1 1/2 T garlic
  • 2 c split peas
  • 8 c veggie broth
  • 1 t salt

Margot’s Split Pea Soup Directions

    1 . In a large pot heat the oil. Cook the onions, carrots, celery and garlic until the onions are translucent. 2 . Stir in the split peas, broth and salt 3 . Cover and bring to a boil. Reduce heat and let simmer for 1-1 ½ hours. 4 . Puree with a blender. Return to the heat and serve!
