An old housemate passed along her mom’s split pea soup recipe, adapted for our Co-op’s vegetarian needs. It is one of the best I’ve ever had. Enjoy Margot’s variation on split pea soup! - SR
1 . In a large pot heat the oil. Cook the onions, carrots, celery and garlic until the onions are translucent.
2 . Stir in the split peas, broth and salt
3 . Cover and bring to a boil. Reduce heat and let simmer for 1-1 ½ hours.
4 . Puree with a blender. Return to the heat and serve!
