These traditional cookie rings rely more on spice than sugar, delivering the licorice-scent of anise and a chewy, not-too-sweet cookie.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup semolina flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons anise seed, ground
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/2 cup unsalted butter
- 1/2 cup sugar
- 1/4 cup milk, plus more for brushing
Preparation
- Line a large baking sheet with parchment paper.
- Preheat the oven to 375 F.
- In a large bowl, combine the all-purpose flour, semolina flour, salt, baking powder, anise seed, cinnamon and turmeric. Reserve.
- In a large bowl or stand mixer, cream the butter until smooth. Add the sugar and beat until fluffy. Add half the flour mixture, then the milk, then the rest of the flour mixture, beating to mix after each addition.
- Scoop 2 tablespoon-sized portions and roll each with your palms to make a 5-inch long snake. Loop the snake to make a circle and pinch the ends together, then place on the baking sheet.
- Brush all the cookies with milk.
- Bake for 15-18 minutes, until golden and puffed.
- Cool on racks. Transfer to an airtight container to store for up to a week.
Serving Suggestion
Serve with hot chocolate, coffee or tea.
