Easy turkey gravy for Thanksgiving Day!
Ingredients
- 1 qt of turkey stock and/or pan drippings
- ½ cup all purpose flour
- ½ cup butter
- Salt and pepper to taste
Preparation
- Bring the stock to a simmer in a pot.
- In a separate sauce pan, melt the butter and then whisk in the flour. Cook this mixture, which is called a roux when it is finished, over medium heat until the smell of raw flour dissipates and takes on a nutty aroma instead, and the roux just begins to take on a little color (3-5 minutes).
- When the roux is cooked, begin to add the hot stock a little at a time, incorporating the stock fully between additions.
- Season with salt and pepper to taste, thin with more liquid as necessary.
Serving Suggestions & Notes
- Further season the gravy with fresh chopped or dried herbs like sage, parsley, rosemary, and thyme.
- Finish the gravy by whisking in a pat of cold butter to give a bit of a shine and richness.
- Brighten up the flavor of the gravy with a small squeeze of lemon or a splash of vinegar.
