- 1 large fennel bulb, cored and thinly sliced
- 2 c cherry tomatoes, halved
- 1 t Dijon mustard
- 3 T red wine vinegar
- 1/2 c olive oil
- salt and pepper
- 2 T fennel frond, finely chopped
Tomato and Fennel Salad Directions
- Combine the fennel and the tomatoes. Mix together the Dijon mustard, vinegar,
and oil. Season to taste with salt and pepper. Pour the dressing over the
fennel and tomatoes. Top with the chopped fennel frond
