Leftover turkey usually makes its way into sandwiches and soups, but how about trying a creamy, spicy tikka masala with your turkey and transforming leftovers into something completely different? You’ll want to make this recipe and use it all the time.
Ingredients
- 2 tablespoons ghee or avocado oil
- 1 small onion, chopped
- 1 large jalapeño, seeded and chopped
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 1 teaspoon garam masala
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne, optional
- 14 ounces canned tomato puree
- 1 cup coconut milk
- 1/2 teaspoon salt
- 3 cups cooked turkey, cubed
- 1 teaspoon lemon juice
Preparation
- In a large saute pan, warm the ghee or oil over medium-high heat, then add the onion. Cook for at least 10 minutes to soften. Add jalapeño, ginger and garlic and stir for a minute, then add garam masala, paprika and cayenne and stir until fragrant.
- Stir in the tomato puree, coconut milk and salt, then bring to a boil. Reduce the heat to medium-low to simmer gently for about 5 minutes.
- Stir in the turkey and lemon juice and bring to a simmer, cooking until the turkey is warmed through.
Serving Suggestion
Garnish with fresh cilantro and serve with cooked rice or flatbreads.
