A fast and easy stir-fried dinner dish. Make it vegetarian or not!

Time: Preparation 15 minutes

Ingredients

  • 2 pound asparagus
  • 3 tablespoon oil
  • 3 teaspoon sesame oil
  • 2 tablespoon chopped fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 3/4 cup roasted cashews or finely diced chicken

Preparation

  1. Segment each asparagus stalk into 3 sections. Heat the oils over medium heat; add the ginger and garlic and saute for about one minute.
  2. Add the asparagus pieces and sauté about four minutes.
  3. Add the soy sauce at the end and garnish with the cashews.
  4. Alternately, marinate the chicken in the soy sauce separately and add to the skillet at the same time as the asparagus.
