- 8 corn tortillas
- 16 oz monterey jack cheese
- 2 pk enchilada sauce
Easy Green or Red Chile Enchiladas Directions
- Preheat oven to 400F.
- Wrap the stack of tortillas in a layer of plastic wrap. Microwave about 30 seconds, until piping hot.
- Place 1/4 cup of cheese onto each warm tortilla. Roll up, then place seam-side-down in a baking dish. Cover the rolled up tortillas with enchilada sauce and top with remaining cheese. Bake until bubbling hot, about 15 minutes.
