Scandinavian Coconut Cookies

Many of us find ourselves short on time during the holidays with places to go, things to do, people to see. If you find yourself needing to prepare a dessert that looks fancy but takes less than an hour to make, look no further than these easy coconut cookies.

  • 2 1/2 c shredded coconut
  • 2 T butter
  • 2 eggs
  • 3/4 c sugar
  • 1/2 t vanilla extract
  • 1 t coarse salt

Scandinavian Coconut Cookies Directions

  1. Preheat oven to 350°F. Line two baking sheets with parchment or silicone baking mats. 
  2. Melt the butter in a small saucepan over low heat. Remove from heat and stir in the coconut. 
  3. In a large bowl, beat the eggs until frothy and pale yellow. Add the sugar and beat until light and fluffy, then stir in the vanilla extract. Fold the coconut and butter mixture into the egg and sugar mixture, and stir until well-combined. 
  4. Drop the batter in rounded teaspoons onto the prepared baking sheets, leaving an inch between cookies. Use the back of a spoon to flatten lightly. If needed, stir the batter occasionally to reincorporate the melted butter. Sprinkle each cookie with just a touch of salt. Bake 8-11 minutes, until golden.
