Sesame Shiitake Noodles

Serve this tasty noodle dish with baked tofu for a great meal.

  • 1 lb linguini
  • 2 T canola oil
  • 2 T seasame oil
  • 1 T ginger
  • 4 oz shiitake mushrooms
  • 1/2 head bok choy
  • 2 clv garlic, minced
  • 2 T tamari
  • 2 t white wine vinegar
  • 1/4 c water
  • toasted sesame seeds
  • scallion

Sesame Shiitake Noodles Directions

  1. Cook linguini in boiling water 8-10 minutes, stirring occasionally; drain and cool. Sauté ginger and shitakes in both oils for about 5 minutes. Add bok choy and sauté 5 minutes longer. Add garlic, tamari, vinegar and water and heat through. Combine noodles with sauce, and then add toasted sesame seeds and chopped scallion for garnish. Mix well.
