Roasted Sweet Potatoes with Miso Scallion Butter

Baked sweet potatoes are delicious on their own, but this miso-scallion butter takes them over the top!

  • 8 sweet potatoes
  • 3/4 c butter
  • 1 1/2 T miso
  • 3 T scallion

Roasted Sweet Potatoes with Miso Scallion Butter Directions

  1. Preheat oven to 350˚F.
  2. Poke the potatoes on all sides with a fork. Arrange on a parchment- or foil-lined baking sheet. Bake in upper third of oven for 45 minutes to 1 hour, until very tender.
  3. Place butter in a small bowl, and add the miso and scallions. Stir together until combined.
  4. Slice the sweet potatoes down the middle and top with a spoonful of miso-scallion butter. Serve with additional miso-scallion butter on the side.
