- 1 bn spinach
- 5 T butter
- 1 onion
- 2 sausages
- 1 red pepper
- 1/2 t salt
- 1/2 t black pepper
- 12 sli ham
- 12 eggs
Shirred Eggs with Sausage and Spinach Directions
- Place the spinach in a large pot and cover tightly. Cook over high heat for about 2 minutes, until the spinach wilts. Use tongs to thoroughly squeeze out any liquid, then set aside.
- Heat 1 tablespoon of butter or ghee in a large skillet over medium heat. Add the onion and sausage, and sauté for 5 minutes, stirring occasionally, until onions are softened. Stir in the red pepper and sauté for 2 minutes. Season with salt and pepper to taste. Transfer the mixture to a bowl and set aside.
- Preheat oven to 425˚F. Melt the remaining 4 tablespoons of butter or ghee and use it to grease a 12-cup muffin pan. Press a slice of ham into each muffin cup, making a little bowl. Divide the spinach among the 12 muffin cups, then add some of the onion, pepper, and sausage mixture to each. Crack one egg into each muffin cup.
- Bake 15-20 minutes, until the eggs are cooked to your liking. Allow to cool for 1-2 minutes, then enjoy.
