Blue Cheese and Walnut Linguini

  • 1 t black pepper, or to taste
  • 1 t salt
  • 1 c balsamic vinegar
  • 2/3 c walnuts, toasted
  • 3/4 c blue cheese, crumbled
  • 1/2 c parsley, minced
  • 1 c olive oil
  • 2 medium yellow onions, sliced in half moons
  • 1 lb linguini, cooked and drained

Blue Cheese and Walnut Linguini Directions

    Heat oil in sauté pan and add onions. Caramelize the onions and add balsamic vinegar. Let boil for 3 minutes to reduce juice. Add onions and liquid to cooked pasta and cool. When fully cooled add parsley, salt, pepper, blue cheese, and toasted walnuts. Mix and serve.
