blue-cheese-and-walnut-linguini
- 1 t black pepper, or to taste
- 1 t salt
- 1 c balsamic vinegar
- 2/3 c walnuts, toasted
- 3/4 c blue cheese, crumbled
- 1/2 c parsley, minced
- 1 c olive oil
- 2 medium yellow onions, sliced in half moons
- 1 lb linguini, cooked and drained
Blue Cheese and Walnut Linguini Directions
- Heat oil in sauté pan and add onions. Caramelize the onions and add balsamic vinegar.
Let boil for 3 minutes to reduce juice. Add onions and liquid to cooked pasta and cool.
When fully cooled add parsley, salt, pepper, blue cheese, and toasted walnuts.
Mix and serve.
