curry-noodle-stir-fry
- 1/2 lb soba noodles, cooked
- 1 small onion, diced
- 2 clv garlic, minced
- 1 each red and green bell pepper, chopped
- 3 c broccoli or cauliflower, chopped and steamed
- 1 c frozen peas
- 1 T olive oil
- 1 t turmeric
- 1 t brown mustard seed
- 1/2 t whole cumin seeds
- 1 t arrowroot
- 1/2 c cilantro, chopped
- 1/4 c water
- tamari to taste
- limejuice to taste
Curry Noodle Stir Fry Directions
- Sauté onions in olive oil until translucent. Add garlic, broccoli and peppers and cook until slightly softened. Add water, turmeric, mustard, cumin, and arrowroot. Bring to a boil, stirring frequently. When mixture thickens, remove from heat. Pour over noodles and mix well. Add cilantro and peas. Adjust for salt and acid with tamari (start with 1 tablespoon) and limejuice (start with ½-tablespoon).
