Curry Noodle Stir Fry

  • 1/2 lb soba noodles, cooked
  • 1 small onion, diced
  • 2 clv garlic, minced
  • 1 each red and green bell pepper, chopped
  • 3 c broccoli or cauliflower, chopped and steamed
  • 1 c frozen peas
  • 1 T olive oil
  • 1 t turmeric
  • 1 t brown mustard seed
  • 1/2 t whole cumin seeds
  • 1 t arrowroot
  • 1/2 c cilantro, chopped
  • 1/4 c water
  • tamari to taste
  • limejuice to taste

Curry Noodle Stir Fry Directions

    Sauté onions in olive oil until translucent. Add garlic, broccoli and peppers and cook until slightly softened. Add water, turmeric, mustard, cumin, and arrowroot. Bring to a boil, stirring frequently. When mixture thickens, remove from heat. Pour over noodles and mix well. Add cilantro and peas. Adjust for salt and acid with tamari (start with 1 tablespoon) and limejuice (start with ½-tablespoon).
