- 2 T lemon juice
- 3 T olive oil
- 1 t honey
- 1 t champagne vinegar
- 1 T heavy cream
- salt
- pepper
- 1/2 red leaf lettuce head
- 1/2 cantaloupe
- 1/2 red onion
- 6 fresh figs
- 1/2 c crumbled feta cheese
Fig and Melon Salad with Creamy Lemon Vinaigrette Directions
- In a small bowl, whisk together the lemon juice, olive oil, honey, vinegar, and heavy cream. Add salt and lots of black pepper and stir to combine, tasting and adding more if needed.
- Place the lettuce, cantaloupe, and red onion on a serving platter and drizzle with the vinaigrette. Toss gently to combine. Top with the fresh figs and crumbled feta. Enjoy!
